Native Recipes of Iceland

 

Iceland Snow Flake Bread (Laufabraud)

 

Ingredients:                                                                                      

 

 

4c         All Purpose Flour                               

1tsp      Baking Powder

1tbs      Sugar                      

 

1tbs      Melted Butter

2c         Milk, heated to boiling

 

Directions:

 

1) In a bowl, combine flour, baking powder and sugar.

2) Mix in the butter and hot milk until stiff dough is formed.

3) Turn out onto a lightly oiled surface and knead until smooth and cooled.

4) Divide dough into four parts.

5) Shape each part into a ball.

6) Divide each ball into four parts to make 16 little balls which you will then again divide into 2 parts to create a total of 32.

7) Cover baking sheets with waxed paper and dust the waxed paper lightly with flour.

8) On a lightly flouredsurface, roll out each part of dough to make a thin round about 8in. in diameter.

9) Place the rounds on the floured waxed paper.

10) Chill 30 minutes.

11) In a skillet, heat 2in. of fat to 375-400 degrees F. Vegetable shortening or corn or peanut oil may be used but the athentic fat is lard.

12) Fold the dough rounds, one at a time, into quarters, and, with a sharp-tipped knife,make little cuts and cut-outs in the dough.

13) Fry the bread rounds, until golden brown, about 1 minute on each side.

14) Remove and drain on paper toweling. Store in an airtight container in a cool place or in the freezer until ready to serve

                                                                                                                                                                                                                             

 

Hjonabandssaela (A Blessed Marriage Cake) - Dessert

 

Ingredients:

 

2c         Oatmeal

2c         Flour

1c         Sugar

1           Egg

8-10oz.  Margarine

1tsp.     Baking Soda

Rhubarb Jam

 

Directions:

 

1) Combine all dry ingredients and then blend in margarine and egg.

2) Mix well and press half of the dough into 2 9-10in. pans or pie plates.

3) Then cover the dough with rhubarb jam. Topped by crumbling the rest of the dough on top of the jam.

4) Bake st 325-350 degrees F until golden brown. Best served lukewarm with whipped cream.

 

                                                                                                                                                                                                                                            

 

Icelandic Pancakes - Dessert

 

Ingredients:

 

2 1/2dl Flour 

1/4tsp   Salt

1tsp       Sugar

1/2 tsp  Baking powder or Baking Soda

2            Eggs

3-4dl     Milk

25gr       Margarine or 2tbs Vegetable Oil

1/4tsp    Vanilla

 

Directions:

 

1) Blend together the flour,  salt, sugar, baking powder or soda, and half of the milk. Mix together until smooth.

2) Beat the eggs together and stir together the eggs, milk and the previously mixed ingredients.

3) Melt the margarine with low heat and mix in with vanilla and other ingredients.

4) Bake in very thin crepes-like cakes on a oiled skillet (or an Icelandic pancake pan). Best served rolled up with sugar or folded in fourths with jam/jelly and whipped cream.

 

1dl - 100ml or 6 2/3tbs                                              gr - grams

 

                                                                                                                                                                                                  

 

Kjotsupa (Meat Soup) - Main Dish

 

Ingredients:

 

2c 1/2-2lbs.   Fresh lamb, shoulder

4pints             Water

1 1/2tbs.        Salt

1/4c                Rice 

1lb.                 Rutabagas (yellow turnips)

1                     Onion

Cabbage

Potatoes

                    You may use any Vegetable available or preferred.

 

Directions:

 

1) Have the meat chopped into rather small pieces. Boil the meat in salted water for 25 minutes. Skim.

2) Rinse and add the rice. Continue to boil another 20 minutes. Add cleaned vegetables cut into rather small pieces.

3) Boil for 15 minutes. Add minced parsley when served.
